Ouf, on peut se reposer ! / Phew, now we can get some rest !

AT LAST the holidays are here. The last few weeks were full of various germs and viruses, attempts not to let the ever increasing number of papers to grade and lessons to prepare - and sessions at the sophrologist that really did me a lot of good. I'm getting back on my feet and feel alive again - and it feels so good ! - and I've found a new balance. Everybody tells me that it's because I'm in the year when I'm turning 40 and it's normal, but I wonder if it's the sheer number that is to blame, I think that in every person's growth and evolution there are stages and I've reached one. It just happens to be this year when I'm turning 40.

The house happens to be in the same state as in the picture, everywhere you look : boxes and bags and stuff just thrown about, we'll have some 15 minute Flylady-style missions to do to put things back in order.
We also did a lot of cooking - and as we didn't go out very often because of the bad weather we did some "pantry cooking" - like when you open the fridge, instead of panicking and thinking "OH MY, there's nothing in there I must go grocery shopping because otherwise we're going to starve", you look at what you DO have and see what you can make out of it. And Laure was happy to help to make the Christmas cookies - with all the ingredients we always have stocked up on.
We had a lot of carrots for a while and we had started to use up things stored in the freezer. I googled "rice carrots eggs" and I found this recipe of a rice tortilla and as you can see I forgot the rice, and it looks quite different, but it was really good anyway.
Another way to get by : we started to get short on everything but the carrots, so Ifound a way to adapt them with the ever-present rice in our pantry (a little change from pasta). I hurried before Jean would be home and cook plain white water boiled rice (which I call "punished rice" - I always wonder what harm we did him when he serves it without any seasonning or sauce or side dish...) and I made a risotto (with some leftover ham). I found that a little something was missing, but everybody - except for the ever-picky little Elise - liked it.
By the week-end things were going pretty bad : we only had some Italian cheese leftovers, half a can of mushrooms left from the tortilla, some sour cream and not much else here and there. Well never mind, I still had homemade pizza dough in the freezer and since Jean was to go to Châlons (about 450 km away - he wouldn't be with us all day and a bit of the next day) for a pingpong competition, I decided it would be enough for me and the girls and I wouldn't go grocery shopping. I used everything as topping for the pizza - I took a can of peeled tomatoes to mix with the sour cream, added an onion, sprinkled the mushrooms, a little provolone and some emmental - and added basil of course.
Well I think it was one of the best pizza I had ever eaten. The girls loved it but weren't very hungry so I got to finish it off !!! Yum yum !!
(I went grocery shopping the next day, Jean was starting to get uneasy and pale, and when he's like this he brings home half a supermarket and this invasion makes me crazy, and I feel oppressed).
Puis j'ai eu du courrier...
And then I had mail...
... and what a nice surprise ! I thought I had won only one soap, and in fact there were two ! (as people had to say if they preferred apple or pumpkin pie in the comments - so I thought I would get the "flavor" I said I preferred). They are beautiful, and smell divinely good, and there was even a little ladybug bookmark (that I could just about save from the fury of my two little girls who suddenly started hopping and claiming and clinging to me !)
And yesterday I got mail again - Lorrie thought about me and my family and sends her wishes from Canada... this is so sweet of her ! Words fail me to express how grateful I am, and how wonderful it is that technology would allow people from all over the world to get in touch !! What's more she had already sent me a gardening magazine, about which I wanted to post, but it was in the deepest of the busy part of school and I set it aside for "later", then read it and forgot about taking pictures... but I'm nonetheless very happy about it - thank you Lorrie for this nice gesture !

Hello Carole,
Thank you so kindly I have just received the magazine and I have a lovely time reading it curled up om the sofa with a hot chocolate!
You are such a sweet lady to send it too me!
Yesterday We went to the post office in the swirling snow as I had 3 parcels(including your little gift) and some Christmas cards to post . But the post office had closed due to bad weather! So annoying especially as all the shops had stayed open! I will try again on Monday!Your pizza looks delicious!
Have a good weekend!

Loevly to read your sory of how you've got through the last few challenging weeks - well done to you all (especially to you!)

And thanks so much for your very encouraging and helpful comment on my post, too.

And now vacations are here - I hope you enjoy the time at home and with your sweet family.
What fun to hear of your imaginative meals, cooked from the pantry. Around our house we call it "eating from the camel's hump" - because the camel is said to store nutrition in his hump that will last him a good long time. It's not necessarily a Canadian expression, just something our family came up with year's ago, I believe.

Joyeux Noel, Merry Christmas!

Wow! What an update :) I'm glad you got the soap and hope you enjoy it (or find someone special who will).
